 Newsweek has termed Vegetarian Times as “the bible of vegetarianism.”  This soft-cover book contains 250 meatless recipes, in 216 pages. Besides the usual categories of recipes, the editors created a chapter for “Kidz.” There’s also a section on cooking methods handy for newcomers to the kitchen. Chosen recipes can be made in 15 to 30 minutes.

CURRY AND CHICK PEA LETTUCE WRAPS:  Calls for curry paste, soy Meat” crumbles,  spinach, carrots and tomatoes 

MUHAMMARAH (RED PEPPER AND WALNUT SPREAD):  Dry breadcrumbs, olive oil, raspberry vinegar, cumin cayenne, black pepper and parsley

SESAME WONTON WEDGES:  Garlic powder, salt, paprika and wonton wrappers 

HERBED GOAT CHEESE  AND CUCUMBER TEA SANDWICHES: Whole wheat bread, parsley, fresh tarragon, chives, lemon zest and black pepper 

SPINACH AND BLUE CHEESE SALAD:  Cider vinegar, Dijon mustard, honey, olive oil, shallot, sunflower seeds and an apple 

STRAWBERRY SALAD WITH GORGONZOLA DRESSING:  Plain yogurt, lemon juice, vegetable oil, butter lettuce, watercress, mint leaves and slivered almonds

CORN SALAD:  Olive oil, red onion, chili powder, cumin, bell pepper, tomatoes, cilantro, and sherry vinegar  

EASY BLACK BEAN CHILI:  Roasted garlic salsa, green onions and cilantro 

WHITE BEAN SOUP WITH COLLARD GREENS:  Olive oil, onions and tarragon 

RISI E BISI (BEANS AND RICE) WITH PEA PESTO:  Basil leaves, olive oil, Parmesan cheese, pine nuts, brown sugar, vegetable stock, onion, Arborio rice, garlic and sherry 

WARM PEA PUREE WITH AGED GOAT CHEESE AND GARLIC TOASTS:  French baguette, garlic, olive oil, unsalted butter, leeks, stock and granulated sugar 

“CREAM” OF ASPARAGUS SOUP:  Olive oil, onions, rice, bouillon cubes and fresh thyme 

CURRIED SPINACH-POTATO SOUP:  Olive oil, leeks, curry powder, stock, milk and yogurt for garnish 

BROCCOLI RABE WITH ROASTED TOMATOES:  Olive oil, balsamic vinegar, garlic, and rosemary 

ROASTED CAULIFLOWER WITH OLIVES:  Olive oil and parsley 

CURRIED CORN WITH CHILES:  Vegetable oil, green onions, coconut milk, coriander, cumin, curry powder, cayenne, lemon zest and cilantro 

QUINOA AND MUSHROOM SKILLET:  Olive oil, red onion and stock 

BITTERSWEET CHOCOLATE PUDDING:  Milk, Vanilla, Ricotta cheese and almonds 

CHOCOLATE-CHILE MOLE MERINGES:  Egg whites, sugar, lime juice, vanilla, cinnamon, walnuts and confectioners’ sugar 

HOMEMADE GINGER ALE:  Brown sugar, cinnamon, cayenne and sparkling water
